| 1 tablespoon | Olive oil |
| 1 | Small yellow onion, chopped |
| 1 | Medium zucchini, cut in half lengthwise, then into 1/4-inch slices |
| 1 cup | Diced ham |
| 6 | Large eggs |
| 2 tsp | Dried cilantro, or 1 1/3 tablespoons fresh |
| 1/4 tsp | Salt |
| 1/4 tsp | Black pepper |
| 3/4 cup | Shredded Gruyere cheese |
1. Preheat broiler. Heat oil in large ovenproof, nonstick skillet over medium heat. Saute onion and zucchini 2 minutes. Reduce heat to medium-low. Add ham; cook 2 minutes more.
2. Whisk egg, cilantro, salt and pepper in a medium bowl to blend well. Pour over vegetables and ham in skillet. Cook without stirring until eggs are set on bottom.
3. Sprinkle with cheese. Broil until eggs are set and cheese is lightly browned, about 5 minutes.
Cook's tip: Wrap skillet handle in foil if your skillet is not ovenproof.
