| 1 tbsp. | EVO |
| 1 cup | Chopped Fresh Vegetables (ie. Broccoli, Mushrooms, Bell Peppers, Zucchini, Onions) |
| 2 - 3 tbsp. | Salsa |
| 3 | Eggs |
| | Low-Fat Grated Cheese |
1. Saute vegetables in EVO until onions are clear. Add salsa and cook until heated through. Remove veggies mix from pan & set aside.
2. Scramble eggs for omelet. Carefully flip once when cooked through.
3. Scoop veggie mix unto half of the omelet and sprinkle with grated cheese.
4. Fold and serve.
