| 1 1/2 lb. | Ground beef |
| 1 pkg. | Taco seasoning |
| 1/2 cup | Water |
| 1 (12 oz) can | Whole kernel corn, drained |
| 1/2 cup | Chopped green pepper (I used Bell) |
| 1 (15 oz) can | Black beans |
| 1 can | (8oz) tomato sauce |
| 1 pkg | (8 1/2 oz) corn muffin mix |
| 1 can | (2.8 oz) French-Fried Onions |
| 1/3 cup | (1 oz.) shredded cheddar cheese |
Brown and drain the meat; stir in the next 6 ingredients; pour into a 8x12 baking dish. Prepare the corn muffin mix according to package directions,except add 1/2 cup French fried onions. Spoon the muffin mix around the outer edges of casserole. Bake, uncovered, at 400'f for 20 minutes. Top with remaining onions and cheese. Bake for 2 to 3 minutes more.
+++When using leftover taco meat reduce ingredients proportionately and use a 8x8 or 9x9 brownie pan.
