Mexican Casserole

Easy to make, great way to use leftover taco meat

Ingredients

1 1/2 lb. Ground beef
1 pkg. Taco seasoning
1/2 cup Water
1 (12 oz) can Whole kernel corn, drained
1/2 cup Chopped green pepper (I used Bell)
1 (15 oz) can Black beans
1 can (8oz) tomato sauce
1 pkg (8 1/2 oz) corn muffin mix
1 can (2.8 oz) French-Fried Onions
1/3 cup (1 oz.) shredded cheddar cheese

Preparation

Brown and drain the meat; stir in the next 6 ingredients; pour into a 8x12 baking dish. Prepare the corn muffin mix according to package directions,except add 1/2 cup French fried onions. Spoon the muffin mix around the outer edges of casserole. Bake, uncovered, at 400'f for 20 minutes. Top with remaining onions and cheese. Bake for 2 to 3 minutes more.

+++When using leftover taco meat reduce ingredients proportionately and use a 8x8 or 9x9 brownie pan.
