Dilled Cauliflower Salad

Ingredients

8oz. Eden biodynamic rye spirals
6 cups Small cauliflower florets (1" across the top, about 1 lb)
1 Small red onion, coarsely chopped
1 tsp Dried dillweed
2 tbsp Eden extra virgin oilive oil
2 cloves Garlic, minced
2 tbsp Freshly squeezed lemon juice, or more to taste
1/2 tsp Eden sea salt
 Freshly ground black pepper to taste

Preparation

1. Cook pasta as package directs, drain, rinse & set aside.

2. Place cauliflower florets in a steamer basket and sprinkle with onion and dill; steam over high heat until tender, 3 to 5 minutes.

3. Transfer to a bowl or storage container; toss in the olive oil, garlic, lemon juice, salt, and pepper. Mix in pasta.

Cook's Notes

Serve hot or at room temperature.
